Vegan + Gluten Free
This is a sweeter version of hummus which is very kid friendly and perfect as a spread on sandwiches, a dip or as a side dish.
1 small beetroot
1 clove of garlic
3 tbsp olive oil
2 tbsp tahini
1 cup cooked chickpeas (garbanzo beans)
juice of 1 lemon
zest of 1 lemon
salt and pepper to taste
Slice and roast one beet in the oven at 350F for about 30 minutes.
Into a blender: add all the above ingredients plus the roasted beets.
Blend everything to desired consistency.
