Raspberry Chocolate Bliss Balls

 
 

Vegan, Gluten Free, Refined Sugar Free = Guilt Free.

These bliss balls make great, healthy snacks for adults and kids. They are nutrient-dense, and because you are using whole foods, there is fiber and does not cause the insulin spikes typically associated with sugary snacks.

These are refined sugar free, and you can add protein to it by adding 2 tablespoons of hemp seeds.

They can be batch made and frozen, and by the time you’re ready to snack, it would have defrosted.

Ingredients

  • 1 cup rolled oats

  • 1/2 cup pitted medjool dates

  • 1/2 cup dried apricot try to get the dark brown ones which have been unsulphured

  • 2 tsp raw cacao powder or cocoa powder

  • 1/3 cup rice puffs optional (this adds crunch)

  • 1/3 cup freeze dried raspberries (you can also use 1/2 cup frozen raspberries which have been reduced down by simmering for 10 minutes)

  • 2 tbsp desiccated coconut for rolling

  • 2 tbsp dark chocolate chips

Instructions

  1. In a food processor, pulse and blend everything except the rice puffs, freeze dried raspberries and coconut 

  2. add in the raspberries, rice puffs and mix (you can also just pulse this for 1 minute or so to mix)

  3. roll the mixture into small balls and then roll in the desiccated coconut.
