Vegan, Gluten Free, Banana Bread

Vegan, Gluten Free, Refined Sugar Free = Guilt Free.

Over ripe bananas are the best natural sweeteners. This banana bread requires no sugar, it is naturally sweet and when combined with coconut flour (which is high in fiber) provides the perfect snack for you and your family.

Warm it up and then dollop with coconut yoghurt to turn it into a healthy dessert.

Ingredients

  • 3 ripe bananas - ripe bananas have brown dots on them and are naturally sweet 

  • 1/2 cup coconut flour (if don't have just use 1 cup almond flour)

  • 1/2 cup almond flour

  • 1 tbsp baking powder

  • 1 tbsp apple cider vinegar

  • 2/3 cup chia egg made by stirring 2 tbsp chia seeds in 5 tbsp water, stirring and leaving it to stand for 10 minutes

  • 1/4 cup dairy-free milk

  • 2 tbsp chocolate chips optional

Instructions

  1. preheat oven to 350F (180C)

  2. Make your chia egg (see above)

  3. If you have a food processor, it is easier to make this in the food processor. However, you can also hand mix and mash everything.

  4. Add the bananas, flours, baking powder and apple cider vinegar into the processor (or if by hand, mash the bananas first then mix in the flours and then the baking powder and apple cider vinegar)

  5. Once mixed, add in the chia egg. Leave the mixture to rest for 5 minutes

  6. mix in chocolate chips (optional) 

  7. transfer to a bread tin lined with parchment paper

  8. bake for 25-30 minutes
